Gastronomy



The cuisine of Izamal has all the charm and surprise of Yucatecan food. The market or a good restaurant are opportunities to treat the palate to an exquisite mix of flavors: pork and beans, egg with chaya, puchero (turkey stew), stuffed cheese, salbutes, panuchos, venison in pipian sauce, papadzules (hard-boiled egg tacos), longaniza (spicy sausage), pollo pibil (marinated chicken wrapped in banana leaves), cochinita pibil (whole pig, wrapped in banana leaves and baked in the ground), joroches, mucbil pollos (baked-in-the-ground chicken and pork corn dough slabs) pimes and tamales, are just a few of the dishes which can be accompanied by a glass of honey-based xtabentún and balché, anis flavored drinks, posol with coconut (a drink made with corn paste), or a refreshing horchata. To finish on a sweet note, nothing beats yucca with honey, honeyed squash, camote with coconut, cocoyol in syrup, pumpkin seed marzipan, melcocha, arepas, tejocotes in syrup, or ciricote dessert.
